Prosciutto Wrapped Scallops and Shrimp served with Green Beans

It brings me such great satisfaction knowing that the foods I love are so good for me!  My love for fish and seafood benefits my health because of the many nutrients they provide. We have all heard so much about the benefits fish provides for our health, mainly our cardiovascular system.  But did you know that scallops are a very good source of vitamin B-12? This vitamin is needed by our body to convert homocysteine, which is a chemical that can directly damage blood vessel walls. High levels of homocysteine are associated with increased risk of heart disease, heart attack, and stroke.  So it's a good idea to get the proper amount of vitamin B-12 into our system. In addition to their B12, scallops are a very good source of omega fatty acids and a good source of magnesium and potassium, three other nutrients that provide significant benefits for the cardiovascular system. Omega-3 fats help keep your blood flowing smoothly by preventing blood clot formation. Magnesium helps by relaxing blood vessels, which lowers blood pressure and improves blood flow. Potassium helps to maintain normal blood pressure levels. So with that said, let's discuss the great taste! This meal is so simple yet delicious and gourmet. I wanted to give it a bit of a salty kick, so I wrapped the shrimp and scallops in prosciutto.  This is an Italian ham that has more fat than an American ham. Many people like to wrap their food in bacon, but I chose prosciutto because it still provides that great taste, but with so much less fat and calories. I served it with steamed green beans, though you may use any vegetable you prefer. This meal took less than 30 minutes from the start of prep to enjoying.
Indulge in the irresistible combination of tender scallops and succulent shrimp wrapped in delicate prosciutto, creating a dish where the sweetness of the seafood meets the savory richness of perfectly crisped Italian cured ham. Each bite delivers a beautiful balance of flavors and textures, from the buttery scallops and juicy shrimp to the satisfying saltiness of the prosciutto. Served alongside vibrant green beans tossed with olive oil, garlic, and fresh herbs, this elegant meal is as nourishing as it is delicious. Scallops and shrimp are excellent sources of lean protein, helping support healthy muscles while providing important nutrients such as selenium, vitamin B12, and omega-3 fatty acids. Green beans add a fresh, colorful touch while offering fiber, vitamin C, vitamin K, and antioxidants that support overall wellness. The addition of heart-healthy olive oil provides beneficial monounsaturated fats, making this dish a flavorful example of how simple ingredients can create a balanced meal. Whether you're preparing a romantic dinner or entertaining guests, this beautiful seafood creation brings restaurant-quality elegance right to your table. With its stunning presentation and incredible combination of flavors, Prosciutto Wrapped Scallops and Shrimp with Green Beans is a meal that proves healthy eating can be truly indulgent.Enjoy!

Hi Katherine! Thank you so much for the like and comment. This recipe is so easy to prepare. Let me know how your shrimp and scallop meal turns out.

You will need the following for each serving

      3 Shrimp
      2 large Scallops
      2 slices Prosciutto
      2 tablespoons unsalted butter

Clean and devein the shrimp. Take the prosciutto and divide the slices in long halfs so you can wrap them around the shrimp and scallops. In a nonstick skillet melt the butter and place the scallops first in the butter since they will take longer to cook than the shrimp. Cook over medium/low heat for about 3 minutes. You will have to turn it over and cook the other side . At this point add the shrimp in the butter sauce. Cook for about 2 minutes and turn over.
You will know they are done when the shrimp turn pink and the scallops no longer have the raw look to them (when they turn white inside and are browned on the outside.
