Prosciutto Wrapped Scallops and Shrimp served with Green Beans

It brings me such great satisfaction knowing that the foods I love are so good for me!  My love for fish and seafood benefits my health because of the many nutrients they provide. We have all heard so much about the benefits fish provides for our health, mainly our cardiovascular system.  But did you know that scallops are a very good source of vitamin B-12? This vitamin is needed by our body to convert homocysteine, which is a chemical that can directly damage blood vessel walls. High levels of homocysteine are associated with increased risk of heart disease, heart attack, and stroke.  So it's a good idea to get the proper amount of vitamin B-12 into our system. In addition to their B12, scallops are a very good source of omega fatty acids and a good source of magnesium and potassium, three other nutrients that provide significant benefits for the cardiovascular system. Omega-3 fats help keep your blood flowing smoothly by preventing blood clot formation. Magnesium helps by relaxing blood vessels, which lowers blood pressure and improves blood flow. Potassium helps to maintain normal blood pressure levels. So with that said, let's discuss the great taste! This meal is so simple yet delicious and gourmet. I wanted to give it a bit of a salty kick, so I wrapped the shrimp and scallops in prosciutto.  This is an Italian ham that has more fat than an American ham. Many people like to wrap their food in bacon, but I chose prosciutto because it still provides that great taste, but with so much less fat and calories. I served it with steamed green beans, though you may use any vegetable you prefer. This meal took less than 30 minutes from the start of prep to enjoying.

Ingredients
  

  • 1/4 cup olive oil fresh
  • 8 large scallops
  • 8 extra large shrimp fresh, peeled and deveined
  • 4 slices prosciutto each piece sliced into 4 strips
  • 1 cup green beans fresh, steamed

Instructions
 

  • Wrap each shrimp and scallop tightly with prosciutto, ensuring they are fully covered.
  • Heat the oil in a skillet over medium heat and add the wrapped shrimp and scallops.
  • Cook for 10 minutes, turning occasionally until the prosciutto is crispy and the seafood is cooked through.
  • While the seafood is cooking, steam the green beans until tender, about 5-7 minutes.
  • Once the seafood is done, serve immediately with the steamed green beans on the side.

Notes

You can substitute the green beans for any vegetable of your choice.
