Classic French Mussels

  • Stock pot with tight fitting lid

Ingredients
  

  • 2 pounds cleaned mussels
  • 2 tablespoon2 unsalted butter
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley
  • 1 shallot sliced thinly
  • 2 cloves garlic chopped
  • 1/2 cup dry white wine

Instructions
 

Prep the Mussels:

  • Place the mussels in a large bowl with 1/4 cup of salt and set aside for 15 minutes. This will allow the mussels to purge any debris. Carefully drain the mussels in a colander and give them a good rinse. Take a paper towel and grab onto the "beards and pull them off each mussel, and set the mussels carefully into a large bowl. Discard any opened mussels that do not close when lightly tapped on the counter or any cracked-shelled mussels.
  • Heat the oil and butter in a large pot over medium heat. Once the butter melts into the oil, add in the shallot and cook for 3 minutes.
  • Add in the garlic and cook for about 2 minutes over a medium-low heat.
  • Add the white wine and cook for 1 minute.
  • Add the mussels and carefully stir. Cover for about 8 minutes until all of the shells have opened.
  • Halfway into the cooking stir the mussels to distribute the sauce. Discard any unopened shells after 8-10 minutes.
  • Sprinkle on the parsley.
  • Serve in a deeper bowl with the sauce and serve with bread slices for dunking into the delicious sauce. Enjoy!
