Six Spice Rub Chicken with Organic brown Rice

This is a great meal to prepare when you are in the mood for some healthy, spicy food! All of the spices and herbs used create such a delightful flavor, and the spices add the kick you are looking for without all of the fat!
I chose an organic brown rice for the side dish as a nice complement to the spiciness.

  • 1 Meat mallet
  • 1 plastic film
  • 1 Tongs

Ingredients
  

  • 1 8 ounce chicken breast pounded to 1/2 inch thick and cut into two pieces
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • fresh cracked pepper and salt to season
  • 1/4 teaspoon ground coriander
  • 1 teaspoon parsley
  • 1 cup sliced red onion
  • 2 cloves finely chopped garlic
  • 2 tablespoons chopped cilantro
  • 1/4 cup white wine
  • 1 cup cubed tomatoes

Instructions
 

  • In a small bowl, mix the following: cumin, paprika, red pepper flakes, pepper, salt, ground coriander, and parsley. Place the chicken on a cutting board and cover with plastic film. Using the flat side of a meat mallet, carefully pound the chicken to about 1/4 inch thick. Rub the mix on both sides of the chicken.
  • Heat the oil in a skillet. When hot, add the chicken and cook over medium/low heat for 5 minutes. Using tongs, turn chicken over and cook an additional 4 minutes. Remove to a platter and keep warm.
  • To the same skillet add the sliced onion and cook for 1 minute. Add the garlic and cook for one minute. Add the wine and cook for one minute. Add the tomatoes and add the chicken back in. Cook for 4 additional minutes.
  • Serve with the brown rice and garnish with the cilantro.
