This is a great meal to prepare when you are in the mood for some healthy, spicy food! 18 ouncechicken breastpounded to 1/2 inch thick and cut into two pieces
2tablespoonsextra virgin olive oil
1teaspoonground cumin
1/2teaspoonpaprika
1/4teaspoonred pepper flakes
fresh cracked pepper and saltto season
1/4teaspoonground coriander
1teaspoonparsley
1cupsliced red onion
2clovesfinely chopped garlic
2tablespoonschopped cilantro
1/4cupwhite wine
1cupcubed tomatoes
Instructions
In a small bowl, mix the following: cumin, paprika, red pepper flakes, pepper, salt, ground coriander, and parsley. Place the chicken on a cutting board and cover with plastic film. Using the flat side of a meat mallet, carefully pound the chicken to about 1/4 inch thick. Rub the mix on both sides of the chicken.
Heat the oil in a skillet. When hot, add the chicken and cook over medium/low heat for 5 minutes. Using tongs, turn chicken over and cook an additional 4 minutes. Remove to a platter and keep warm.
To the same skillet add the sliced onion and cook for 1 minute. Add the garlic and cook for one minute. Add the wine and cook for one minute. Add the tomatoes and add the chicken back in. Cook for 4 additional minutes.
Serve with the brown rice and garnish with the cilantro.
