Guacamole

Avocados are a smooth, creamy and healthy treat. They are high in monounsaturated fats, considered among the healthiest fats. Monounsaturated fats improve heart health, which is very important especially for people with diabetes, who are at an increased risk for stroke and heart disease. Due to their anti-inflammatory nutrients, there have also been studies where avocados are believed to prevent the occurrence of cancers in the skin, mouth and prostate. That relationship is to be expected since cancer risk factors almost always include excessive inflammation (related to lack of anti-inflammatory nutrients) and oxidative stress (related to lack of antioxidants).
So, besides this information, avocados are simply amazing and I highly recommend incorporating them into your meals.
Tonight I made a guacamole and served it with some tortilla chips. No special equipment, other than a knife  and fork needed here.

Equipment

  • Knife
  • Fork
  • Bowl

Ingredients
  

  • 1 ripe Avocado halved lengthwise, pitted, peeled and coarsely chopped
  • 1 teaspoon Salt
  • 1/8 teaspoon ground Pepper
  • 1/4 finely diced Onion
  • 2 cloves fresh Garlic mashed
  • 2 tablespoons finely chopped fresh Cilantro
  • 1 tablespoon finely chopped Jalapeno Pepper
  • Tortilla Chips

Instructions
 

  • Slice the avocado in half lengthwise and twist to separate.
  • Take a large knife and strike it into the pit, twist the knife to release the pit and remove the pit.
  • With a teaspoon, carefully remove the green flesh inside each half and place in a small bowl. Mash the flesh with a fork.
  • Add the lime juice, salt, pepper, onion, garlic, cilantro and pepper. Mix to incorporate all of the ingredients.
  • Divide the mixture and place each half back inside the avocado shell. Top off with some fresh cilantro.
  • Serve with lime zest and tortillas.
