Ingredients
  

  • 2 4 ounce boneless skinless chicken breast
  • 2 tablespoons grape seed oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • pinch salt and pepper
  • 1 tablespoon tomato paste
  • 1/2 cup fresh cilantro, chopped or 4 frozen cilantro cubes
  • 3/4 cup chicken stock
  • 1 cup diced fresh tomato

Instructions
 

  • Heat the oil in a large skillet over medium low heat. When hot, add the garlic and ginger. Cook for about 30 seconds.
  • Add the coriander, garam masala, salt and pepper. Cook for an additional 30 seconds, constantly mixing so it will not burn and to mix in all of the flavors.
  • Stir in the tomato paste.
  • Add the chicken and cook for about 3 minutes on each side.
  • Add the chicken stock, tomatoes and cilantro. Allow to simmer on low for about 12 minutes or until chicken is cooked through. Sprinkle with fresh cilantro.
