Brown Butter Corn Bread

Ingredients
  

  • 1/2 pound unsalted butter
  • 2 1/4 cups whole milk
  • 2 large eggs, lightly beaten
  • 3 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1 tablespoon kosher salt
  • 2 tablespoons baking powder
  • Flakes Sea Salt, such as Maldon, for sprinkling

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. In a 12-inch cast-iron skillet, melt the butter over medium-low heat. Heat the butter until it’s browned but not burnt, stirring occasionally. Observe the butter so it does not burn. It should take about 8-10 minutes to brown the butter.
    Pour the butter into a medium bowl along with any browned bits. Allow it to cool for about 2 minutes. Set the skillet aside. 
    Whisk the milk into lightly cooled butter, then whisk in the eggs until combined. Never add the eggs directly to the hot butter (you’ll get scrambled eggs).
    In a large bowl, whisk together the flour, cornmeal, salt, and baking powder. Make a well in the center, pour the butter and milk mixture into the well, and stir with a spatula just until combined. Set the batter aside for 15 minutes to rest.
    Stir the batter, transfer it back into the skillet, and sprinkle the top with flaked sea salt and bake for 30-40 minutes, until a toothpick inserted in the center comes out clean. Allow it to cool for 10 minutes. Cut into wedges and serve. Enjoy!
