Challah French Toast with Bananas & Walnuts

There is something wonderfully comforting about challah French toast, especially when thick slices of this golden, slightly sweet bread are transformed into a warm, custardy breakfast. Challah’s buttery flavor and tender texture make it an especially delicious choice for French toast, giving every bite a delightful combination of crisp edges and a soft, pillowy center. Slice the challah about 1½ to 2 inches thick, then gently dip each slice into the egg mixture, allowing the bread to soak up just enough without becoming too soft. As it cooks, the challah turns beautifully golden and develops a lightly crisp exterior while remaining wonderfully tender inside.
Top the French toast with sliced bananas and a generous sprinkling of chopped walnuts for a combination that is as nutritious as it is delicious. The bananas add natural sweetness, fiber, potassium, and vitamin B6, while their creamy texture pairs beautifully with the richness of the challah. Walnuts bring a satisfying crunch along with plant-based protein, fiber, magnesium, copper, and manganese, plus heart-friendly unsaturated fats and alpha-linolenic acid (ALA), a plant-based omega-3 fatty acid. Meanwhile, the eggs and milk provide additional protein, helping turn this indulgent-tasting breakfast into a more satisfying and balanced meal.
For an even greater nutritional boost, choose whole-grain challah when available and add a handful of fresh berries or a spoonful of Greek yogurt alongside your French toast. A delicate drizzle of pure maple syrup is all you need to bring everything together without overwhelming the natural sweetness of the bananas. The result is a breakfast that is crisp, creamy, fruity, nutty, and just sweet enough to feel special. It is proof that a wholesome breakfast doesn't have to be boring—or behave itself completely. So grab a fork and dig into this golden stack of challah, bananas, and walnuts, because breakfast just got a deliciously nutritious upgrade. Enjoy!

Ingredients

CHallah French Toast

  • 6 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon orange zest grated
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon good honey
  • 1 teaspoon Kosher salt
  • 1 Large loaf Challah bread
  • Unsalted butter
  • Vegetable oil
  • 1 cup Walnuts chopped
  • 2 bananas peeled, and sliced into 1/2" pieces
  • 2 cups Pure Maple Syrup

Instructions

  • Preheat the oven to 250 degrees.
In a large shallow dish, whisk together the eggs, milk, orange zest, honey, vanilla extract, and salt.
Slice the challah bread into 3/4" slices. Place as many slices into the bowl as possible, and allow the bread to soak up the egg mixture for about 5 minutes, turning once.
Over medium heat, in a very large saute pan, heat 1 tablespoon butter and 1 tablespoon vegetable oil. Add the soaked bread and cook for 2-3 minutes on each side, until nicely browned. Place the cooked bread onto a sheet pan with a rack and keep it warm in the oven while you prepare the remaining bread.
As you cook the bread, add any additional butter and oil as needed.
Serve with maple syrup, sliced bananas, and walnuts.

My children loved the bananas. This was a nice variation on my typical recipe for French toast.
