Spinach Stuffed Pork Loin

Ingredients
- 1 lb pork loin butterflied
- 2 cups fresh spinach
- 1 cup cream cheese
- 1/2 cup mozzarella cheese
- 1 clove garlic minced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add fresh spinach to the skillet, cooking until wilted, approximately 2-3 minutes.
- In a mixing bowl, combine cream cheese, mozzarella cheese, sautéed spinach, salt, and pepper. Mix well until all ingredients are combined.
- Butterfly the pork loin by cutting it horizontally without going all the way through. Open it up like a book.
- Spread the spinach filling evenly over the opened pork loin, then roll it back up tightly.
- Secure the rolled pork loin with kitchen twine or toothpicks to hold the filling inside.
- Place the rolled pork loin in a baking dish and bake for 1-1.5 hours, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let it rest for 10 minutes before slicing.
- Slice pork loin into 1-inch thick pieces and serve.
