Spinach Stuffed Pork Loin

Ingredients
  

  • 1 lb pork loin butterflied
  • 2 cups fresh spinach
  • 1 cup cream cheese
  • 1/2 cup mozzarella cheese
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and sautĂ© minced garlic until fragrant.
  • Add fresh spinach to the skillet, cooking until wilted, approximately 2-3 minutes.
  • In a mixing bowl, combine cream cheese, mozzarella cheese, sautĂ©ed spinach, salt, and pepper. Mix well until all ingredients are combined.
  • Butterfly the pork loin by cutting it horizontally without going all the way through. Open it up like a book.
  • Spread the spinach filling evenly over the opened pork loin, then roll it back up tightly.
  • Secure the rolled pork loin with kitchen twine or toothpicks to hold the filling inside.
  • Place the rolled pork loin in a baking dish and bake for 1-1.5 hours, or until the internal temperature reaches 145°F (63°C).
  • Remove from the oven and let it rest for 10 minutes before slicing.
  • Slice pork loin into 1-inch thick pieces and serve.

Notes

This dish pairs well with roasted vegetables or a fresh salad.
