Instructions
Preheat your oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
Add fresh spinach to the skillet, cooking until wilted, approximately 2-3 minutes.
In a mixing bowl, combine cream cheese, mozzarella cheese, sautéed spinach, salt, and pepper. Mix well until all ingredients are combined.
Butterfly the pork loin by cutting it horizontally without going all the way through. Open it up like a book.
Spread the spinach filling evenly over the opened pork loin, then roll it back up tightly.
Secure the rolled pork loin with kitchen twine or toothpicks to hold the filling inside.
Place the rolled pork loin in a baking dish and bake for 1-1.5 hours, or until the internal temperature reaches 145°F (63°C).
Remove from the oven and let it rest for 10 minutes before slicing.
Slice pork loin into 1-inch thick pieces and serve.
Notes
