Prosciutto Wrapped Asparagus with Gruyere Cheese

Tired of the same old vegetables? Well, no need to eat the same old boring food. . Let this wake up your taste buds with some healthy asparagus wrapped in tasty prosciutto and topped with some creamy, melted Gruyere cheese!
Asparagus is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells. Asparagus is also good in minerals, especially copper and iron. In addition, it has small amounts of some other essential minerals and electrolytes such as calcium, potassium, manganese, and phosphorus. Not so boring, right?
Prosciutto Wrapped Asparagus with Gruyere Cheese
Ingredients: Serves 2
  • 8 pieces of asparagus
  • 2 slices of prosciutto
  • 8 ounces of Gruyere cheese, sliced
Preparation:
Preheat oven to 425 degrees. Place a pot of water on the stove and bring it to a boil. In the meantime, trim the ends of the asparagus. Once the water comes to a boil add the asparagus and cook for three minutes. Remove and place in a large bowl filled with water and ice. This will stop the cooking process and help to retain the rich green color of the vegetable. Let it rest for a few minutes. Remove and pat dry with a paper towel. Take 4 pieces of asparagus and wrap with 1 slice of the prosciutto. Do the same with the other 4 pieces of asparagus. Place in an oven proof baking dish and top off with the cheese. Place in the preheated oven for 10 minutes.

  • Take 4 pieces of asparagus and wrap with 1 slice of the prosciutto. Repeat with the other 4 pieces.
  • Place wrapped asparagus in an oven proof baking dish and top off with the cheese.
  • Place in the preheated oven for 10 minutes.
