Ingredients
  

  • 4 fillets Branzino scaled and cleaned
  • 1 pound Potatoes cut into small cubes
  • 2 cups Cherry tomatoes halved
  • 1 cup Bell peppers sliced (red, yellow, or green)
  • 2 tablespoons Capers drained
  • 3 tablespoons Olive oil extra virgin
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • 1 lemon Lemon juiced (for serving)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a baking dish, combine the potatoes, tomatoes, and bell peppers, drizzled with olive oil, salt, and black pepper.
  • Toss the vegetables until they are evenly coated in the oil and seasonings. Spread them out evenly in the baking dish.
  • Place the branzino fillets on top of the vegetables in the baking dish. Scatter the capers over the fish and vegetables.
  • Drizzle a little more olive oil on the fish and season with additional salt and black pepper if desired.
  • Bake in the preheated oven for about 30-35 minutes or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender.
  • Once done, remove from the oven and let it rest for a few minutes. Squeeze fresh lemon juice over the dish before serving.

Notes

Feel free to substitute branzino with any similar white fish such as sea bass or snapper. You can also add olives or herbs like parsley for extra flavor.
