Spinach Soup with Turkey Meatballs
Equipment
- Large pot
- mixing bowl
- Cooking spoon
Ingredients
- 1 lb Ground turkey I used organic, 93% lean.
- 1/4 cup Pecorino Romano cheese Grated
- 1/4 cup Parmigiano Reggiano cheese Grated
- 4 cups Chicken broth
- 4 cups Fresh spinach Organic
- 1 small Onion Chopped
- 2 cloves Garlic Minced
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Italian seasoning
Instructions
- In a large mixing bowl, combine ground turkey, Pecorino Romano cheese, Parmigiano Reggiano cheese, minced garlic, salt, pepper, and Italian seasoning. Mix well until fully combined.
- Form the turkey mixture into meatballs, about 1 inch in diameter.
- In a large pot, heat the chicken broth over medium heat until it comes to a simmer.
- Carefully add the meatballs to the simmering broth. Cook for about 20 minutes, or until the meatballs are cooked through.
- Add the chopped onion and spinach to the pot, stirring until the spinach is wilted and the onion is tender, about 5-7 minutes.
- Taste the soup and adjust seasonings if necessary. Serve warm.
