Refreshing Cucumber Hummus Hors D’oeuvres

This is such an easy treat to prepare and fun to make with children. Since cucumbers are packed with water and electrolytes, this is also very refreshing. Did you know that cucumbers are packed with minerals such as phosphorus, magnesium, potassium and calcium? These minerals help our bodies regulate the sodium in our bodies, aid in maintaining a healthy digestive system and muscle movement. They also contain vitamins K, A and C. You may use either an organic, English cucumber or plain organic cucumber, organic hummus, organic grape tomatoes that have been coated in some extra virgin olive oil and decorated with some fresh dill. The dill, with its’ lemony flavor, provides a beautiful compliment. No dressing needed here. So, if you have a knife, spoon and toothpick, you can make this. If you want to add some color and nutrition to your party, these are also a snap to make. With the beginning of the summer holiday, soon to be pool parties and barbecues, why not make some of these as a refreshing snack or Hors d’oeuvres?

Equipment

  • Knife
  • Spoon
  • Toothpick
  • Large bowl

Ingredients
  

  • 1 large English or regular organic cucumber cut into 1 inch circles
  • 1 8 ounce container organic hummus
  • 18-20 pieces organic grape tomatoes
  • to taste fresh dill
  • 18-20 pieces toothpicks
  • 1/4 cup extra virgin olive oil

Instructions
 

  • Wash and rinse the grape tomatoes. Drain. Place the olive oil in a large bowl and add the tomatoes. Carefully toss to coat all of the tomatoes with the olive oil and set aside while preparing the rest.
  • Wash the cucumber and pat dry. Using a knife or vegetable peeler, remove some of the outer skin by running the knife or peeler lengthwise along the cucumber. Do about 1/2 inch spacing of skin, no skin. Cut into 1 inch circles. You should get about 18 slices depending on the size of the cucumber.

These hors d’oeuvres are a great way to stay cool during summer parties!
