Organic Whole Wheat Pasta With Sun-Dried Tomato Pesto
Equipment
- pot
- Colander
- food processor
- Medium bowl
Ingredients
- 1 pound penne pasta organic whole wheat
- to season salt and pepper
- 1 8.5 ounce jar sun-dried tomatoes
- 1 cup fresh basil plus a few leaves for garnish
- 4 cloves garlic peeled
- 1 cup grated parmesan cheese plus more for garnish
- 1 cup boiled pasta water
Instructions
- Prepare the pasta according to package directions, making sure to reserve 1 cup of the pasta water before draining.
- In a food processor, place the sun-dried tomatoes along with the oil from the jar. Add the basil, garlic cloves, Parmesan cheese, salt and pepper. Process until you have a smooth consistency.
- Remove into a medium bowl and add enough pasta water to make a smooth, but not runny pesto.
- Add the pasta and carefully fold into the pesto to evenly coat the pasta.
- Serve this with some extra grated Parmesan cheese and a few leaves of basil.
