It always brings me great joy when I go to the farmers market and come back with a new and beautiful find. Today I came across a beautiful flower, the Nasturtium, an edible flower. This flower adds such great beauty to any meal. It’s full of color and adds a peppery punch that is similar to watercress. Nasturtium seeds are edible as well when they are young and green and have been likened to capers when pickled. They even offer their fare share of Vitamin C. Today, I thought it would be a nice day to prepare a simple salad made with mixed greens, grape tomatoes, dried cranberries, a drizzle of extra virgin olive oil, some grilled garlic bread and some beautiful flowers. How simple and elegant is that? Simple Salad with Nasturium Flowers 2 cups mixed greens of your choice 1/4 cup flowers of Nasturium flower 4 grapes, sliced in half 2 tablespoons dried cranberries Good Organic extra virgin olive oil Salt & Freshly ground pepper to season Place first 4 ingredients in a salad bowl and toss with the olive oil. Season with salt and pepper. Serve with some grilled bread.

Ingredients
  

  • 2 cups mixed greens of your choice
  • 1/4 cup Nasturtium flowers
  • 4 pieces grapes sliced in half
  • 2 tablespoons dried cranberries
  • to taste organic extra virgin olive oil
  • to taste salt
  • to taste freshly ground pepper

Instructions
 

  • Place the first 4 ingredients (mixed greens, Nasturtium flowers, sliced grapes, and dried cranberries) in a salad bowl.
  • Toss the salad with organic extra virgin olive oil.
  • Season with salt and freshly ground pepper to taste.
  • Serve with some grilled bread.
