It’s “Frites” Week (French Fries)
Equipment
- oven
- Baking Sheet
- mixing bowl
Ingredients
- 1 pound fingerling potatoes or 2 large Russet potatoes, scrubbed clean, skins on, each cut into 10 wedges
- 6 tablespoons olive oil divided
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- to taste none Salt
- to taste none Pepper
- 2 teaspoons fresh thyme chopped
- 2 teaspoons fresh parsley chopped
- 3/4 cup ketchup
- 2 tablespoons aged balsamic vinegar or 1 tablespoon Balsamic drizzle
- 1/2 cup Parmesan Cheese grated
Instructions
- Preheat oven to 425°F with a baking sheet inside.
- In a mixing bowl large enough to hold the cut potatoes, place in 3 tablespoons olive oil, granulated garlic and onion powder, salt and pepper, chopped thyme and parsley. Mix to incorporate and add in the cut potatoes. Gently toss to coat the potatoes with the mix.
- Scatter potatoes on the hot baking sheet and roast for 30 minutes, turning once halfway through roasting.
- In a small mixing bowl, mix together the ketchup and balsamic vinegar; reserve.
- Remove the potatoes from oven and place back in the bowl you previously used since some of the oil is still in there. Add in the grated Parmesan cheese and the remaining olive oil. Gently toss to coat the potatoes.
- Serve with the ketchup mix.
