Everything Thin Bagel with a Poached Egg and Avocado Spread

Tired of the same old breakfast choices? Well, how about a healthy, nutritious and pleasing to the eye breakfast that can be prepared in under 10 minutes? Yes, that’s right, healthy, nutritious and under 10 minutes. And that includes checking your email. I look forward to my breakfast meal. I always try to  change it up and create something healthy and nutritious. Other times, I am very lazy like most people and just reach for a bowl of cereal (boring) or coffee and a scrambled egg (super boring). Other times I get very creative and make fancy omelettes or some fancy egg, cheese and meat sandwiches. But let’s face it, who has the time? If we had a Jeanie, well she could make our favorite breakfast and we could go on our merry way for the day. But reality sets in and time is an issue. Really, who has time to make breakfast? Okay, let’s try this. Because honestly it is so easy and quick and most importantly healthy that 5 minutes is not a lot of time invested here. Start to boil your water  for the poached egg (s) Place your bagel in the toaster. In the meantime, mash you avocado with a fork. It can be a rough texture, don’t be so finicky this early in the morning. When the water comes to a boil, add in a tablespoon of vinegar. With a fork, create a whirlpool in the water. Add in the eggs and cook for  5 minutes. Remove with a slotted spoon onto a paper towel to drain the liquid. To serve; place the toasted bagel half onto a plate. Cover with some of themashed avocado. Top off with the poached egg. and serve.

Equipment

  • Toaster
  • pot for boiling water
  • Slotted spoon
  • Fork
  • paper towel

Ingredients
  

  • 1 item Everything Thin Bagel
  • 1 item Egg
  • 1/2 fruit Avocado
  • 1 tablespoon Vinegar for poaching

Instructions
 

  • Start to boil your water for the poached eggs.
  • Place your bagel in the toaster.
  • Mash your avocado with a fork; it can be a rough texture, don’t be too finicky.
  • When the water comes to a boil, add in a tablespoon of vinegar.
  • With a fork, create a whirlpool in the water and add in the eggs, cooking for 5 minutes.
  • Remove the eggs with a slotted spoon onto a paper towel to drain the liquid.
  • To serve, place the toasted bagel half onto a plate, cover with mashed avocado, and top off with the poached egg.
