Coconut Peach Smoothie, Paleo Style

I love to prepare food with fresh ingredients of the season. So today I wanted to make a delicious pick-me-up drink made with to-die-for fresh peaches. They are so juicy, sweet and packed with enormous nutrients your body hungers for. If you go to your local farmers market right now they are in abundance everywhere. So do not pass up the opportunity to buy some and enjoy, either just washed and eaten whole  or in various recipes, such as in this peach coconut smoothie. Forget the store bought smoothies or protein drinks that have been sitting on the shelf for months with expiration dates a year out! How is that fresh or good for you? Bring out your blender and quickly make a delicious, nutritious and fragrant drink that will give you energy, provide vitamins and anti-oxidants and leave you wondering why you cannot get anymore from your straw. The other significant ingredient in this smoothie is the wonderful, tropical coconut. Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow’s milk, coconut milk is lactose free so it can be used as a milk substitute by those with lactose intolerance. . So next time you want a special treat, actually you can make this everyday, opt for a peach coconut smoothie and pretend you are on a tropical island. Why not? you deserve it! Enjoy! Ingredients
  

  • 1 cup coconut milk chilled, full fat
  • 1 cup Ice
  • 2 large fresh peaches peeled and cut into chunks
  • 1 drop culinary lemon essential oil or fresh lemon zest, to taste

Instructions
 

  • Gather all the ingredients: chilled coconut milk, ice, fresh peaches, and lemon zest or essential oil.
  • In a blender, combine the chilled coconut milk, ice, peaches, and lemon zest or essential oil.
  • Blend on high until smooth and creamy.
  • Taste and adjust lemon flavor if necessary.
  • Pour into glasses and serve immediately.
