Bruschetta

Bruschetta, a classic Italian antipasta consisting of grilled bread rubbed with fresh garlic and topped with drizzled olive oil, tomato and fresh basil.
Bruschetta toppings are endless depending on your tastes; mashed fava beans, various meats and cheeses or a combination of all, either way it is very delicious and quick to prepare. Also a great way to use up day old bread!
Bruschetta has always been my families favorite, especially in the summer when we (my daughter) grow fresh basil and tomatoes are ripe and in season. Even if you prepare these gorgeous treats in the winter, they will make your kitchen smell like a summer garden! You may use what ever tomatoes you have, although I love the little grape tomatoes cut in half. They are sweeter and look cute.
Bruschetta is a great appetizer to serve or even a “tapas” (small bites) meal. Light enough that you may enjoy other foods with them or just enjoy with a nice glass of your favorite wine. Either way, I hope you will try this easy recipe and enjoy!
Classic Italian Bruschetta Ingredients: Serves 6-8
  • 1 loaf good crusty bread (either Italian or French)
  • 1/2-1 cup fresh tomatoes, chopped
  • 1/4 cup extra virgin olive oil
  • salt to season
  • 6 cloves fresh garlic, peeled and cut in half
  • 1/4 cup fresh basil, cut chiffonade

Cook Time 9 minutes
Total Time 19 minutes

Equipment

  • Baking Sheet
  • Foil
  • Knife
  • Cutting Board
  • Fork

Ingredients
  

  • 1 loaf good crusty bread either Italian or French
  • 1/2-1 cup fresh tomatoes chopped
  • 1/4 cup extra virgin olive oil
  • salt to season
  • 6 cloves fresh garlic peeled and cut in half
  • 1/4 cup fresh basil cut chiffonade

Instructions
 

  • Preheat the oven to 400 degrees.
  • Slice the loaf of bread into 1/2 inch slices and place onto a baking sheet.
  • Cut the tomatoes. Make a tent with some foil large enough to hold the tomatoes. Place the tomatoes in the foil and drizzle with some of the olive oil. Season with the salt. Place on the baking sheet with the bread.
  • Bake for about 6-9 minutes. Make sure not to burn the bread.
  • Remove from oven and rub the fresh (cut in half cloves) garlic onto the warm bread. I used a fork to help rub the garlic onto the bread. Top with the roasted tomatoes, basil and a drizzle of olive oil. Enjoy!
