Branzino with Capers, Tomatoes, Peppers, Onions & Potatoes
Eating healthy does not have to be boring, bland or complicated. Just try out this wonderful easy recipe of fresh branzino fish, stuffed and surrounded by wonderful and flavorful vegetables and seasonings prepared and ready to enjoy in under 30 minutes. There are many reports stating how beneficial fish are to our health. Low in calories, high in protein, branzino fish, whether it’s called branzino or branzini (you also see this spelling, the plural of branzino) or loup de mer (“wolf of the sea”) or Mediterranean sea bass has a delicate flaky meat and b make it a weekly staple in my home. It’s so quick and easy to prepare and as in this recipe I baked the fish with thin slices of potato and vegetables making it very easy to clean up. Now how easy is that?Equipment

- Baking dish
- Knife
- Cutting Board
Ingredients
- 4 pieces Branzino fish cleaned and scaled
- 2 cups Potatoes thinly sliced
- 1 cup Capers drained
- 1 cup Tomatoes diced
- 1 cup Peppers sliced
- 1 cup Onions sliced
Instructions
- Preheat the oven to 400°F (200°C).
- Clean and scale the branzino fish if not already done by the market or supplier.
- Slice the potatoes thinly and layer them at the bottom of a baking dish.
- Place the branzino on top of the potatoes in the baking dish.
- Surround the fish with the sliced peppers, onions, capers, and diced tomatoes.
- Drizzle with olive oil and season with salt and pepper to taste.
- Bake in the preheated oven for about 15 minutes or until the fish is cooked through and flakes easily with a fork.
