Oahu, Hawaii, the 50th state of the United States, is one of the eight islands in the Hawaiian chain

located in the Central Pacific. It is the third largest of the Hawaiian Islands, with the largest being

commonly referred to as the Big Island or Hawaii Island, and the second largest being Maui. The state

capital of Oahu is Honolulu, which is a very popular vacation destination due to its beautiful beaches and

pleasant climate. Waikiki, located in Honolulu, is the most famous area in Hawaii.

Many movies and television shows have been filmed in Oahu because of its stunning scenery. Notable

titles include Jurassic Park, Hawaii Five-O, and Pirates of the Caribbean: On Stranger Tides. Once you

visit, it’s easy to see why filmmakers chose this breathtaking location.

I feel fortunate to have stayed at such an amazing resort: the Marriott Ko Olina Beach Club.

Upon my arrival, I was immediately captivated by the scenery. The stunning sunset beautifully

illuminated the blue ocean, with tall palm trees framing the pristine white sandy beach. The atmosphere

was both breathtaking and serene. I chose to begin my visit to their outdoor restaurant, Longboards Bar

& Grill, which provided an excellent dining experience.

Enjoy a stunning oceanfront setting while savoring delicious American cuisine and listening to live

Hawaiian music. This welcoming restaurant in Kapolei features signature island cocktails, Hawaiian-style

appetizers, hearty sandwiches, and mouthwatering entrees. It was a wonderful way to kick off my

vacation.

Don’t miss the chance to stop by the famous Leonard’s Malasada Mobile Truck for some delicious, warm,

big donuts located at 46 Haiku Rd., Kaneohe, HI.

before embarking on your adventure at Kualoa Ranch for your UTV tour. It is an absolute must-do

activity.

Enjoy a stunning view along the way of Kaneohe Bay, a 15-minute drive from Leonard’s to Kualoa Ranch.

Kualoa Ranch has two listings on the US Department of the Interior’s National Register of Historic Places.

It is privately owned by eighth-generation descendants of Dr. Gerritt P. Judd. In ancient times, it was one

of the most sacred places on the island. Today, the family still preserves its sacred land and makes sure to keep it untouched from commercialization. Kualoa is a 4,000-acre Private Nature Reserve as well as a

working cattle ranch.

Upon entering the ranch, you will be greeted (figuratively speaking) by horses as you wait for your gear

and instructions for the UTV tour. Just make sure you make prior reservations, as this activity books fast.

Explore the vibrant green landscape where Jurassic Park was filmed and learn about the ancient burial

grounds located on the land. Be sure to wear rubber boots or water shoes, as well as clothing that can

get muddy, because you will get muddy!

The Pearl Harbor National Memorial, located in Oahu, honors the more than 2,300 people who lost their

lives during the Japanese attack on December 7, 1941. This attack marked the beginning of the United

States’ involvement in World War II. The site is designated as a National Historic Landmark, and I highly

recommend visiting to pay tribute to those who sacrificed their lives for our freedom and to learn more

about their stories. Be sure to visit the USS Arizona Memorial, where you will find a large wall inscribed

with the names of those who perished, serving as a solemn reminder of their sacrifices.

Settle into an inviting outdoor seat at Restaurant 604 in Aiea, where you can take in breathtaking views

of Pearl Harbor. Savor a delectable fish sandwich made with freshly caught seafood, complemented by

house-made sauces and toppings. The attentive and friendly staff will ensure that your dining experience

is exceptional, making this a perfect spot to relax and enjoy a meal in a picturesque setting.

Next, I recommend driving to the Dole Plantation and keeping an eye out for the eucalyptus tree located

in the parking lot. This tree is truly unique and offers a stunning visual experience. Be sure to take a

moment to appreciate its vibrant colors, which may appear hand-painted at first glance, but are actually

its natural markings. It’s worth a closer look!

Discover the captivating Pineapple Garden Maze, take a charming train ride through the plantation, and

learn about the fascinating crops. Don’t forget to indulge in some delicious Dole Whip—it’s highly

recommended!

Visit “Green World Coffee Farm” for a cup of aromatic coffee and be sure to grab some to take home.

Their coffee is delicious, and the staff is friendly and helpful.

Start your day early at Laniakea Beach, known as Turtle Beach, located in the northwest part of the

island. Feel free to dip your toes in the soft, white sandy beach.

This remarkable location is home to a thriving population of Hawaiian green turtles that can be observed

basking on its sandy shores during the day. To ensure their safety, it’s important to admire these

incredible creatures from a respectable distance as they soak up the sun and gradually make their way

back to the water.

Consider taking a quick and scenic 7-minute ride to Waimea Bay Beach Park, where you can explore

some of the island’s most lush trees and vibrant plantations. If you’re feeling adventurous, the trail to

Waimea Falls starts in Waimea Valley, which you can find across the street from Waimea Bay. It’s a

wonderful opportunity to connect with nature and experience the island’s beauty firsthand.

Hawaii is home to a wide variety of trees and some of the most beautiful flowers in the world. Take the

time to observe as much as you can; it truly is a breathtaking experience. At the end of the trail, you’ll be

greeted by the stunning Waimea Falls, where you can take a refreshing dip. Be sure to bring bug spray,

water shoes, a bathing suit, and a towel!

Make reservations for Hanauma Bay, a protected marine life conservation area known for its unique

curved shape. It is a popular snorkeling destination in Hawaii.

On the eastern side of the island, visit Kailua Beach Park, where you can build sandcastles on the beach.

This beautiful spot along Oahu’s eastern shoreline features soft, powdery sand, tall ironwood trees, and

stunning turquoise waters. Enjoy activities such as kayaking, stand-up paddleboarding, and kitesurfing,

or simply relax on the sand.

Situated within a volcanic cone on the eastern side of Oahu, Hanauma Bay is a marine sanctuary known

for its vibrant marine life and well-preserved coral reefs. This location has long been considered one of

Oahu’s gems. However, due to the high levels of tourism in the past and the need to protect its natural

resources, city officials have limited the number of visitors to 1,400 per day. This decision came in

response to the misuse and abuse of the area by tourists.

To visit Hanauma Bay, all guests are legally required to avoid mistreating marine animals and should not

touch or walk on the coral. I highly recommend wearing water shoes to protect your feet, as well as

snorkel gear to explore the coral reefs. Additionally, you must use “Reef-Safe” sunscreen, which does not

contain octinoxate or oxybenzone, to prevent damaging the coral. Visitors who do not comply will be

banned from entry. If you forget to bring reef-safe sunscreen, it is available for purchase at the gift shop.

Lastly, while you’re on Oahu, make sure to visit Waikiki Beach in Honolulu, the capital of the island and

one of the most popular beaches in the world.

Make a stop at Dave’s Ice Cream Shop for a refreshing treat, then take a stroll on the beach.

As you walk,

pass by the numerous surfboards on display at the Royal Hawaiian Center and take in the beautiful

garden filled with robust trees and Hawaiian sculptures. For lunch, visit Duke’s Restaurant, named after

the famous Olympic medalist Duke Paoa Kahanamoku, and be sure to try their “Hula Pie.”

Huli Huli Chicken

Experience the ultimate Hawaiian BBQ delight with juicy chicken that caramelizes into a sticky, smoky glaze. Each bite delivers an irresistible balance of sweet and savory island flavors, promising a finger-licking escape to the sun-soaked shores of Hawaii

Ingredients
  

  • 1 cup jarred or canned pineapple juice Do not use fresh pineapple juice
  • 2 tablespoons apple cider vinegar 2
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup light soy sauce
  • 1/2 cup ketchup
  • 1/2 cup light brown sugar
  • 1/2 teaspoon fresh ginger, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon freshly ground black pepper
  • 4 pounds boneless, skinless, chicken thighs, excess fat trimmed
  • 1/4 cup vegetable oil
  • Sliced Green Onions for garnish
  • Optional rice on the side

Instructions
 

  • In a large mixing bowl, mix pineapple juice, apple cider vinegar, Worcestershire sauce, light soy sauce, ketchup, light brown sugar, ginger, garlic, smoked paprika, and black pepper until evenly combined. Reserve 1/2 cup of the marinade and store in the refrigerator while you will have your chicken marinade in the remaining liquid. Add the chicken thighs into the bowl and seal with plastic wrap. Place in the refrigerator for at least 4 hours or overnight.
    Remove the bowl with the chicken onto the kitchen counter and allow it to come to room temperature for about 30 minutes.
    Preferably, use a cast-iron grill pan with grates and lightly brush with some oil. Heat the pan over a medium heat. Once hot, using tongs, carefully remove the chicken from the marinade and place it in the pan, and cook for 6 minutes. Discard the marinade used for the chicken. Turn the chicken onto the other side and cook for 6 minutes. You may have to cook the chicken in batches, depending on your pan size, since you do not want to crowd the pan.
    Turn the chicken back onto the other side and brush with some of the reserved marinade. Cook for 3 minutes. Turn the chicken over again, brush with more marinade and cook 3 additional minutes. The chicken should have an internal temperature of 165 degrees Fahrenheit. Remove from grill and let it rest for 10 minutes.
    Grill the pineapples on both sides until you get grill marks. Serve the chicken with the grilled pineapple and garnish with green onions.
    Serve the chicken with the grilled pineapple over a bed of rice and Enjoy!

Notes

Do not use fresh pineapple juice, as it contains an enzyme called bromelain, that will break down the chicken and make it mushy.
Do not use the marinade from the chicken for basting. ONLY use the reserved marinade.
If you prefer to bake instead of stovetop, bake the chicken in a preheated 375-degree oven for 35-40 minutes or until the internal temperature is 165 degrees. Then brush with the reserved marinade, top off with the fresh pineapple slices, and broil for 2-3 minutes.
