Renowned for its diving opportunities, Belize features accessible barrier reefs and three famous offshore atolls: Lighthouse Reef, Glover’s Reef, and Turneffe Atoll. It is home to the second-largest barrier reef system in the world, the Great Mayan Reef. However, if you’re not a diver, there’s no need to worry; snorkeling in Belize is exceptional, allowing you to experience stunning coral formations and a colorful array of fish.
For nearly 3,000 years, the ancient Maya civilization thrived in Belize, constructing towering temples as tributes to their god-like rulers. Today, Belize is home to the largest modern Maya communities in the region. You can take a boat cruise to New River Lagoon and explore the jungle-covered ruins of Lamanai, which offer an enthralling nature and cultural experience. On the coast, seafood features prominently, while down south Garifuna and Maya specialties are a culinary treat. Lobster is the king of seafood in Belize, much as in the world. It is only in season from June 15 to February 15. Conch, (pronounced ‘konk’) is the large snail-like sea creature that inhabits conch shells. During conch season (October to June), it is often prepared as ceviche (seafood marinated in lemon or lime juice, garlic, and seasonings). A must-try for those who have never had this delicious, fresh seafood. This was my daily treat while on vacation here.
There are more than 200 coral Cayes and islands scattered around the region of Ambergris Caye and Caye Caulker off the coast of North Belize. The Blue Hole is the most famous dive site here and an enduring symbol of Belize. Ambergris Caye is Belize’s largest island and a popular destination for water sports enthusiasts and beach lovers. It’s known for its coral reefs, vibrant marine life, and crystal-clear turquoise waters. The town of San Pedro on Ambergris Caye offers a wide range of activities from budget-friendly to luxury resort experiences and fine dining.

Coconut Chicken Soup
Ingredients
- 1 inch piece of fresh ginger, sliced very thinly
- 1 piece fresh lemongrass, slightly crushed with the back of a knife
- 1 13.5 ounce can full fat coconut milk
- 2 cups chicken stock, low sodium
- 1/2 medium sweet oniom finely sliced
- 4 ounces cremini mushrooms, sliced
- 8 ounces cooked chicken breast or thigh, cut into pieces
- 1 tablespoon fish sauce
- 1 1/2 fresh lime, juiced, slice the rest
- 2 cups cooked Jasmine rice
- 1 tablespoon red pepper flakes
- Fresh cilantro leaves
Instructions
- Place the ginger, lemongrass, coconut milk, chicken stock, sweet onion, and cremini mushrooms into a medium pot. Bring to a boil and then lower to a simmer, uncovered. Allow to simmer for 15 minutes,stirring occasionally. Add the chicken and simmer for an additional 10 minutes. Add the fish sauce. Stir and take off the heat. Stir in the lime juice. Discard the lemongrass piece.Take 2 large soup bowls and place 1 cup of rice in the center of each bowl. Carefully ladle in soup.Sprinkle with red pepper flakes and garnish with fresh cilantro leaves and a slice of lime.
