Red Kale Salad

Who says a salad has to be made with lettuce? Change it up with a delicious, colorful and packed with nutrients Red Kale. Kale is one of my favorite vegetables to eat. Not only does it taste delicious but it is also packed with vitamin K which helps fight various cancers and aids in the prevention of Alzheimer’s disease. Kale is high in iron, low in calories, a mere 36 per cup, is filled with antioxidants, such as flavonoids and carotenoids which help protect us against various cancers, high in vitamin A for our eye health and skin and Kale also is a great detox food since it is filled with fiber and sulfur.
To make this salad I just took about 1 cup of red kale leafs and chopped them up. I took about 1/8 cup each of finely chopped red and orange peppers, 1/8 cup dried cranberries, pinch of salt, 1 tablespoon grated parmesan cheese, 1 tablespoon olive oil and mixed them all together. Now, how easy is that?

Ingredients
  

  • 1 cup red kale leaves chopped
  • 1/8 cup red bell pepper finely chopped
  • 1/8 cup orange bell pepper finely chopped
  • 1/8 cup dried cranberries
  • pinch salt
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon olive oil

Instructions
 

  • Chop the red kale leaves into small pieces.
  • Finely chop the red and orange bell peppers.
  • In a mixing bowl, combine the chopped kale, red peppers, orange peppers, dried cranberries, salt, grated parmesan cheese, and olive oil.
  • Toss all ingredients together until well mixed.

Notes

This salad is a great source of vitamins K, A, and C.
