  • gloves

Ingredients
  

  • 4 medium red beets peeled and cubed
  • to taste salt to season
  • 4 tablespoons unsalted butter room temperature
  • 1/2 teaspoon flat leaf parsley chopped

Instructions
 

  • Use gloves to handle the beets as they will stain your hands a red color.
  • Wash, peel, and cube the red beets into 2 inch cubes.
  • Place in a large pot of salted, cold water. The water should come about 1 inch over the beets.
  • Bring to a boil and cook until fork tender, about 15-20 minutes.
  • Drain.
  • Place back in pot, add in the butter and mash.
  • Garnish with the parsley.

Notes

Use food grade gloves when handling beets to avoid staining.
