TGIF !! (Thank God It's Friday). The beginning of a relaxing weekend. A time to relax with family, friends or maybe some solitude time. Either way, a time to enjoy a very aromatic, healthy and delicious meal. Using fresh, organic ingredients you know exactly what your food contains. No MSG (Monosodium glutamate) , artificial ingredients or lack of flavor here. Once you start to cut the vegetables, their fresh scent will take over your kitchen. What an inviting way to bring people together! There is something about sauteing onions; there should be an air freshener with that scent.. LOL, it may keep your family and friends close by.This meal is also healthy, because it's full of vitamin C packed vegetables and protein and vitamin B vitamin meat. By placing the ingredients in the tortillas, it also forces you to eat less-portion control. But don't worry, even with that, it is still a very satisfying meal. Enjoy!Steak Fajitas
½cuporange juice(I used the juice of 1 large orange)
½cupwhite vinegar
7clovesgarlicfinely minced
1teaspoonsalt
1teaspoonground cumin
1teaspoondried oregano
¼teaspooncayenne pepper
½poundflank steakcut into long ¼ inch strips
1smallwhite onionthinly sliced
1smallred pepperthinly sliced (discard seeds and pith)
1smallyellow pepperthinly sliced (discard seeds and pith)
1smallorange pepperthinly sliced (discard seeds and pith)
2tablespoonscanola oildivided
1cuptomatoeschopped
½cupcheddar cheeseshredded (optional)
4-6tortillaswarmed
1/8cupcilantrofinely chopped (Optional)
Freshlime wedges
1FreshJalapeño peppersliced
Instructions
Combine the orange juice, vinegar, garlic and spices in a large resealable plastic bag; add the beef and seal the bag. Turn the meat around in the bag to coat. Allow to rest while preparing the vegetables.
In a skillet, heat 1 tablespoon of the oil and sauté the onion and peppers until crisp-tender; remove and set aside.
Remove the beef from the bag and discard the marinade. In the same skillet heat the remaining 1 tablespoon oil. When hot add the beef and sauté for 2-4 minutes, depending on desired doneness. Return the vegetables back in and heat through.
You may heat the tortillas over an open low flame on the stove or in the oven. Arrange the beef and vegetables into the tortillas and add tomatoes, cheese and cilantro. Squeeze fresh lime over the meat and vegetables. For a hot kick, top with the jalapeño slices.
