Lamb Chops in a Honey Grape Sauce

Lamb Chops are very tasty meal that is very quick to prepare and so versatile  with ingredients you can use to compliment them. This is a sweeter version using natural sweeteners like honey and grapes. The white wine also gives it a fruity taste that balances all of the flavors.
Lamb has been consumed for thousands of years, especially in the Mediterranean.  It has a little bit of an acquired taste, but one I do enjoy. It is a red meat that has the least amount of fat. Lamb is high in omega 3 fatty acids, (which are good for your heart), folate, vitamin B12 and other vitamins of the B complex family. It is also high in antioxidants which help build a strong immune system.
I decided to create a sweeter version of lamb by using organic honey and grapes, natural sweeteners and served it with some mashed potatoes.

Equipment

  • large nonstick skillet

Ingredients
  

  • 2 4 ounce lamb chops
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 1 teaspoon rosemary
  • 1 clove sliced garlic
  • 1 cup grapes cut in half
  • 1/4 cup white wine
  • 1 teaspoon honey

Instructions
 

  • In a large nonstick skillet heat the oil until hot.
  • Season the lamb chops with salt, pepper and 1/2 teaspoon rosemary.
  • Place in hot skillet and cook for 4 minutes over medium low heat.
  • Turn chops over, add the garlic and cook additional 4 minutes. They will be medium rare.
  • Remove the chops and keep warm.
  • In the same skillet place the remaining rosemary and the grapes. Cook for about 8 minutes, moving them around so they do not burn.
  • Add the wine and cook down for 2 minutes.
  • Add the honey and cook an additional 2 minutes, stirring to incorporate the ingredients.
  • Serve the chops over mashed red potatoes or your favorite side and pour the sauce with grapes over the meat. Enjoy!
