Garlicky, Cauliflower Celery Soup

Well, it's that time of the year again. The cooler weather, windy and rainy days and the "I want to go home and snuggle with either someone or something evenings." With that type of attitude you need a good and healthy meal that will leave you feeling comfy and satisfied, but not bloated and miserable.
Soup is always a great go to "make me feel warm" meal but sometimes the plain old soups we always go to make us feel bland and monotonous. So why not kick it up to a healthy notch that will also make your body and taste buds happy? And for the readers with children that are resistant to eating vegetables, well, bring them into the kitchen to help prepare this lovely soup and I will assure you they will be licking their spoons!
Cauliflower is a beautiful cruciferous vegetable that not only tastes beautiful but can also help prevent breast cancer, colon cancer, prostate cancer and ovarian cancer. As an excellent source of vitamin C, and a very good source of manganese, cauliflower also provides us with a good source of vitamin K. Bring that all together with a beautiful taste and everyone will be happy!

Equipment

  • Blender or immersion blender
  • Cutting Board

Ingredients
  

  • 1 medium Cauliflower, chopped
  • 3 stalks Celery, chopped
  • 4 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 2 tablespoons Olive oil
  • Salt to taste Salt
  • Pepper to taste Pepper

Instructions
 

  • In a soup pot, heat olive oil over medium heat.
  • Add chopped celery and sauté for 5-6 minutes until softened.
  • Add minced garlic and sauté for another minute until fragrant.
  • Add the chopped cauliflower and vegetable broth, bring to a boil.
  • Reduce heat and simmer for about 20 minutes, until cauliflower is tender.
  • Once cooked, blend the soup with an immersion blender until smooth, or transfer to a regular blender in batches.
  • Season with salt and pepper to taste, then serve hot.

Notes

This soup can be blended until completely smooth or left a bit chunky for texture. Adjust seasoning as desired.
