Croissant with Ham, Swiss Cheese, English Cucumber and Organic Pea Shoots
I normally do not eat sandwiches, but when I do, I enjoy making them with a buttery croissant. They are so moist, tender and flaky, who couldn't resist? So to counter the calories, I made it with slices of cooked ham, some delicious Swiss cheese, English cucumber slices and for that crunch, organic pea shoots. I added a swipe of some Dijon mustard for a little tang. I love these crunchy, pea shoot greens! They are high in vitamin C, provide 2 grams of fiber and taste like fresh picked peas. They are a great alternative to lettuce. No need to add anything else but to just enjoy!

- 2 croissants plain croissant
- 6 slices ham of your choice
- 4 slices Swiss cheese
- 8 slices cucumber
- 2 small handfuls organic pea shoots
- Dijon Mustard
Slice the croissants in half lengthwise and spread some Dijon mustard on one side.
Place 3 slices of the ham on each croissant.
Followed by 2 slices of Swiss cheese, 4 slices of cucumber and topped off with some pea shoots.
