Banana Walnut Bread

Whenever I have bananas that have become too ripe I decide that it's a good time to put them to use and make a tasty Banana Walnut bread. Banana bread is a great treat to make and give to your friends or just to make and have for yourself at home. You can slice it and freeze the individual pieces and just take them out when you are in the mood for a sweeter bread. Since I love nuts I added them on top to give the bread a bit of a crunch. You could fold them into the batter, but the nuts on top give it a festive look. So, next time your bananas start to look brown, instead of throwing them out, make a banana bread! Enjoy!

Ingredients
  

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon salt
  • 1 cup sugar or you can substitute with organic coconut palm sugar
  • 0.75 cups unsalted butter melted and cooled
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 0.5 cup chopped walnuts

Instructions
 

  • Preheat oven to 350 degrees.
  • Place the flour, baking soda and salt in a small bowl and set aside.
  • Take two of the bananas and roughly mash them with a fork in a small bowl. Set aside.
  • Take the sugar and remaining two bananas mix for about 4 minutes.
  • Add the melted and cooled butter and mix in the batter.
  • Add the eggs, one at a time and then the vanilla.
  • Gradually add in the flour mixture.
  • Once all is incorporated, fold in the mashed bananas.
  • Pour into a greased 9 x 5 inch baking loaf and top with the walnuts.
  • Bake for 60-70 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean.
  • Remove and allow to cool before removing from the loaf pan.
