Gourmet Chicken Salad Sandwich

Tired of the same old salad? How about incorporating some tasty chicken and grapes for a sweet & savory chicken salad and turning it into a whole meal?

For this recipe I used an herb seasoned organic rotisserie chicken and removed the chicken, skinless and  off the bone. You may either shred the chicken or finely dice, either way it will work. I thought I would be a bit creative by adding in some green grapes and creating a sweet and savory meal.

Whenever it is so hot out like it has been and will continue to be, I just do not feel like turning the oven or store on. So I purchased this whole, organic rotisserie  chicken already baked from the grocery. Shhh, no one has to know. This also helped to save some time. Once I combined all of the ingredients I allowed them to get really cold in the fridge, about 1 hour.  And by serving this salad cold (as it should be)  it also helped the flavors to come together very nicely.

Now, you may  serve this just on a bed of lettuce for that added light meal, in a hollowed whole tomato or on your choice of bread or bun.

Enjoy this with a chilled glass of semi-dry white or fruity white wine and you’ll feel like you are in paradise! Enjoy!

Gourmet Chicken Salad Sandwich

Ingredients: Serves 4

  • 2 cups cooked shredded chicken meat ( I used both light & dark meat)
  • 1/2 cup mayonnaise
  • 1 teaspoon creamy Dijon mustard
  • 3/4 cup celery, finely chopped ( about 1 1/2 stalks)
  • 1 cup whole grapes, diced
  • juice of 1/2  small lemon
  • salt & pepper to taste
  • 1 teaspoon dry tarragon, finely chopped

Preparation:

Place all of the above ingredients into a medium bowl and gently fold to incorporate all of the ingredients evenly. Place in the refrigerator for at least 60 minutes before serving.

Place a  generous amount onto your choice of either bread, buns or inside a hollowed whole tomato or on a bed of lettuce.
