Fluffy Buttermilk Waffles with Fresh Berries & Whipped Cream

There is no better scent to wake up to than freshly made waffles (or anything freshly baked) from your kitchen. The aromatic scent can wake even the hardest person to wake up in the morning. Add in some freshly brewed coffee and you will feel like you are in the most romantic Bed & Breakfast in the world!

There is something about that slightly sweet scent permeating throughout the home in the morning. And when you add in your own fresh made whipped cream and organic berries; oh heck, make a mix of berries, why only use one type; you have a delicious and nutritious breakfast that will start everyone’s day off with a huge smile!

Waffles are a fantastic treat to prepare for just about any day. They really do not take that long to make and are a bit lighter than pancakes. By adding the fresh, sweet, organic berries and sweet, fresh, organic whipped cream there is no one that can resist them.

Breakfast is usually a very quick or even forgotten meal today, but if you set aside the time you can have a great start to your day. Besides that, who says you are only restricted to eating this delicious meal in the morning? How about serving this for dinner? You can be creative and have a little buffet set up with different fruits, the whipped cream, syrup and butter, maybe some chicken sausage or turkey bacon and everyone will feel happy! The fresh mint adds a nice touch but also adds some great flavor.

So please try this recipe and take the time to enjoy your next meal with your family or just by yourself. It’s so important to relax when you eat and really savor and taste your food.

If you want to make it extra special how about serving this with some bubbly Italian Prosecco or French Champagne? Either way, Enjoy!

Belgian Waffles

     Ingredients:

  • 2 Large Eggs, whites and yolk seperated
  • 1 1/2 cups All-purpose flour
  • 1/2 cup Cornstarch
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1 1/2 cups Buttermilk
  • 1/2 cup Milk
  • 6 tbsp Vegetable oil or canola oil
  • 1/2 tsp Vanilla extract
  • 3 tbsp Granulated sugar
  • fresh whipped cream
  • Fresh Berries
  • Fresh Mint
  • Optional Pure Maple Syrup
  • Optional unsalted butter
Preparation:
  • Preheat oven to 200 degrees. Preheat a Belgian waffle iron (if you don’t have a Belgian waffle maker a regular waffle maker would work fine). In a mixing bowl whisk together flour, cornstarch, baking powder, baking soda and salt for 20 seconds, make a well in center of mixture and set aside.
  • In a separate mixing bowl whisk together buttermilk, milk, vegetable oil, vanilla extract and egg yolks until combined. In a separate bowl, using an electric hand mixer set on high speed, whip egg whites (make sure there isn’t a drop of yolk or they’ll never fluff up) until soft peaks form. Add sugar and whip until stiff glossy peaks form.
  • While whisking, pour buttermilk mixture into well in flour mixture and mix just until combined (batter should be slightly lumpy). Fold in egg white mixture. Cook batter in waffle iron according to manufactures directions. Once each waffle is done, transfer to warm oven and allow to rest until crisp. Serve warm with freshly whipped cream and fresh berries for a healthier breakfast meal. Optionally serve with some pure maple syrup and/or unsalted butter.
