It is still summertime and there is an abundance of farm fresh zucchini and heirloom tomatoes. Here is a delicious and nutritious way to prepare them and create a gorgeous presentation. Placing these sweet and juicy vegetables in a baking dish with another sweet vegetable, the vidalia onion , some fresh, aromatic herbs and topping it off with cheese (who can resist cheese), it’s a great side dish or a meal on its’ own! By the way, I used 3, yes, 3 different types of cheese!
