Who doesn’t love pizza? It is such a delicious, cheesy, gooey, comfort food that most will splurge on this  for their weekend night meal. We either order in, go out, make it ourselves or go to friends or families home and celebrate with pizza. Yum!

But this delicious, cheesy and gooey food also comes with many calories. So how can you still enjoy your pizza and not feel so guilty? Substitute the dough crust for a healthy and nutritious eggplant base, that’s how! Trust me, you will not miss the dough crust. And if you are gluten intolerant, this is perfect for you! And as I always say, if you have children, get them involved in preparing this meal, a good way to get them to eat more vegetables. For this recipe I kept it pretty classic, but you can top it with spinach, arugula, broccoli, onions or  whatever you prefer, be creative and let your children be creative too!

So always start with the most fresh ingredients you can. Fresh eggplant, tomatoes, cheese and basil. For this recipe I sliced my fresh garlic paper thin, giving the pizzas a stronger,  garlic taste, but you can substitute with a little sprinkle of garlic powder if you prefer.

Eating more eggplant will provide more dietary fiber, vitamin B1, vitamin B6, vitamin K, folate, and copper into your diet. Plus, there are about 20 calories in 1 cup of eggplant so it is also good for your figure. Eggplants also have the ability to help build strong bones and prevent osteoporosis. So eat up!

Now, some of you may question the cheese part of this recipe, saying it’s high in fat and cholesterol. Okay, I get it, but once in a while may be okay. Besides these are bite size pizzas, not 16 inch round pie! Plus it is a proven fact that when you give yourself one cheat day you are better disciplined the rest of the time. And we already cut back on the dough. Plus, you control the amount of cheese on here.
