Not sure what to prepare for your next meal? Didn’t have time to go to the grocery store, but still want to prepare a delicious, nutritious, healthy and quick meal? How about this egg, turkey bacon, avocado with fig spread on a spinach tortilla? I am sure you have 95% of these ingredients in your kitchen. So why not make this for your go to meal-any meal?

It is packed with protein, iron, vitamin K, C, B5, B6, E, potassium and folate. Also contains small amounts of Magnesium, Manganese, Copper, Iron, Vitamin A, and Phosphorus.

The avocados are great for people with high cholesterol because it does not contain any or sodium!! Plus it is low in saturated fat. And, it has a wonderful, creamy taste that will melt right in your mouth. Yum, yum yum!

I prepared this for a brunch meal with a side arugula salad and tossed in a few grape tomatoes,  that was quite lovely. Nothing like getting in your healthy greens that taste good too!

Egg, Turkey Bacon, Avocado and Fig Spread on a Spinach Tortilla

Ingredients: Serves 2

  • 2 spinach tortillas
  • 2 large eggs
  • 1 tablespoons milk
  • 2 tablespoon butter
  • 1 whole avocado, sliced
  • 2 slices turkey bacon
  • 1/2 cup grated Monterrey Jack cheese
  • 2 tablespoons fig spread
  • 4 cups arugula
  • 1 cup diced tomatoes
  • extra virgin olive oil for salad
  • kosher salt to season
  • freshly ground pepper to season

Preparation:

The easiest prep for the tortillas is to microwave them  for about 30 seconds. You want them warm so they can roll up easily.

Place the 2 slices of turkey bacon between a paper towel and microwave for about 1 1/2 minutes. Set aside.

In a small bowl whisk the two eggs and milk. Season with salt  and pepper.

Heat a small skillet and melt the butter. Now add the whisked egg mixture and cook the eggs to scrambled eggs.

Now, take the tortilla shell and in the middle of the shell, spread one tablespoon of the fig spread. Next add the cheese. Now add the turkey bacon and egg.Top it off with the avocado. Now roll it up and place on a plate seam side down. Cut it in half.

Place the arugula and sliced tomatoes in a small bowl and drizzle with some good extra virgin olive oil. Season with salt and pepper.

Serve the tortilla with the salad.
