Weekends are a time to relax, sleep in, stay in your comfy clothes, watch TV, hang out with your family, friends, pets or solitude. Weekends are also a time to indulge in some comfort food or that sweet something you have been saying no to all week long.
Let’s face it, we work hard and are trying our best to eat healthy. But sometimes, well, many times it is really hard. I get it. Even those 15 minute meals sound too complicated. Uggh, after a long and nagging day at work or a day at home with children that are sick we all want some escape. So where do most people go for that pleasure? Food! Sweet, salty, fatty, fried, double fried, loaded with butter, dripping in grease, caked on with sugar, sugar and salt coated then dipped in chocolate, whatever our vice, we all have one. But, you can still have something that is sweet but will not kill you.
This strawberry sauce, although made with sugar is still mainly fruit. It’s a teaser.Instead of drowning your waffles or pancakes in sugary syrup, you can add this strawberry sauce instead. For the 1 pound of strawberries you only use 1/4 cup sugar. If you want to, you can substitute with stevia, although I find the taste to be altered. Actually, you don’t need a lot of this sauce because the flavor goes a long way.
So go on, indulge a bit, at least you’ll be getting your children or big kid to eat more fruit. Enjoy!
Organic Strawberry Sauce
Ingredients: makes about 3 cups
- 1 pound organic strawberries, washed, hulled and sliced
- ¼ cup water
- ¼ cup organic sugar
- ½ organic lemon, juiced
Preparation:
Place all of the ingredients into a medium pot and stir to combine. Place over a medium heat to bring to a boil. Lower heat and slowly simmer for 25 minutes. Allow to cool before storing. Serve warm or cold.
