Happy Saint Patrick’s Day everyone! Whether you are Irish or not, you can still enjoy all of the festivities by eating and drinking anything green. Whether it’s the famous “Green Beer” or placing some green food coloring into your food to make it green, let’s all celebrate!
These little treats actually do not need any food coloring, since they are all ready for the holiday…they are green. And they also provide that, “Wow, my mouth is on fire” taste. Not too badly, depending on your tolerance for heat, but enough to make you thirsty, maybe for that green beer.
So, if you are still celebrating and want to serve something fun, quick and different, try these jalapenos stuffed with sweet Italian sausage (ahem, who doesn’t like sausage) and brie cheese (ahem, again, who doesn’t like cheese). Trust me, they will all be gone before you can say “Happy Saint Patrick’s Day!!” Enjoy!
Jalapenos Stuffed with Sausage and Cheese
Ingredients: Serves 2
- 3 large jalapenos chili’s, halved lengthwise and seeded
- 1 tablespoon olive oil
- Salt to season
- 1 mild Italian sausage, casing removed
- 1 tablespoon fresh parsley, finely chopped
- ¼ teaspoon ground fennel
- 2 -3 ounces of brie cheese
Preheat the oven to 400 degrees.
Line a small rimmed baking sheet with aluminum foil and drizzle the olive oil in the pan.
Crumble the sausage in a small bowl. Add the ground fennel and chopped parsley and thoroughly mix to incorporate the ingredients evenly. Set aside.
Cut each jalapenos in half, lengthwise and remove the seeds. Season the jalapenos with salt and using your fingers, gently and generously fill each half of the chili with the mixture.
Arrange the jalapenos in a single layer, close to each other, stuffed side up and bake for 20 minutes. Remove from the oven and place the brie cheese on top of each jalapeno. Place back in the oven for 2 minutes. Serve right away.
