Endive Radicchio Pear Salad

Spring is trying to make it’s way here (thank God) and to celebrate, I have decided to make a salad that reminds me of some flowers and light afternoon meals! If you look at the way I arranged the radicchio it looks like a pansy. Very pretty!

Instead of eating a heavy sandwich that is full of processed meat, why not make a healthy and delicious salad that contains walnuts, crumbled blue cheese, endive, radicchio, romaine lettuce, thinly sliced pear (if you do not like pears you may substitute with an apple) and a soft drizzle of a sweet raspberry vinaigrette? Yummy!!! All of these flavors compliment each other very well and the raspberry vinaigrette adds just a touch of sweetness that will surely put a smile on your face! Very simple to make. Just use equal parts of raspberry preserves to equal parts of balsamic vinegar. I used 1 tablespoon of each because I do not like too much dressing. Besides you do not want to drown the flavors just enhance them.

Did you know that eating just 1/4 cup of walnuts provides more than 100 % of the daily recommended value of omega-3 fats (yes, good for your heart stuff)? So if you are not crazy about eating salmon (Salmon is known for providing omega-3), this could be a great alternative. Besides, walnuts travel better in your lunch box than salmon. Enjoy!
