Baked Cornish Game Hen with Fennel

Who says your evening meal has to be stressful? This is another tasty and moist meal to prepare in an hour, giving you time to prop your feet up and relax while your oven does all the work. You can get everything ready the night before, and then the next day when you come home, just preheat your oven to 375 degrees and place everything in the oven, walk away and relax for an hour. Easy, easy, easy!

I like to purchase a Cornish game hen because of the size. Let’s face it, not everyone cooks for more than 2 people. This little bird is the perfect size for two or one with leftovers. By adding the vegetables into the oven with the bird your clean-up is much easier too.

To prepare this meal, just rinse and pat dry the bird. Take a rimmed baking sheet and line it with some foil. Drizzle it with olive oil and set the bird on top of the oiled foil. Stuff the inside of the bird with a about 1/8 cup chopped scallion, some fresh parsley and  some citrus fruit. I used a tangerine but you can use a lemon, lime or orange. Then, I seasoned this with a salt, cracked pepper and dry ginger rub. Very easy, just mix 2 tablespoons salt, 1 tablespoon cracked pepper and 1 teaspoon dry ginger. I cut up a large potato into 2-3 inch pieces and placed it around the bird. Then I sliced some fennel and placed that around the bird. Drizzled it all with olive oil. I turned up the sides of the foil so the oil would not run out of the foil onto the baking sheet, leaving the bird and vegetables uncovered. Placed it in the preheated oven and set the timer for 1 hour.  Now this is where you can either sit and relax or do something you have wanted to all day, remember you have an hour of uninterrupted time!

Once the timer goes off, remove the baking sheet from the oven and allow the bird to rest for 10 minutes before cutting it. Now you can once again, sit, relax, enjoy your meal and maybe even a nice glass of wine!
