Sun-dried tomatoes have an enormous amount of flavor, especially the ones that are marinating in olive oil in the jar or the one near the deli counter where you purchase them per pound. Either way, these are the type you need for this recipe.
This is an amazing dish that has so much flavor without all of those hidden calories you may find in foods with great flavor. It’s full of vitamin C, and help lower high blood pressure. Eating sun-dried tomatoes can help reduce your total and LDL cholesterol levels and your risk of developing heart disease. And did I mention how delicious they are?

Organic Whole Wheat Penne Pasta With Sun-Dried Tomato Pesto
Ingredients: Serves 4-6
- 1 pound penne pasta (I used organic whole wheat)
- salt and pepper to season
- 1 8.5 ounce jar of sun-dried tomatoes
- 1 cup fresh basil
- 4 cloves garlic, peeled
- 1 cup grated parmesan cheese
- 4 -6 tablespoons of the boiled pasta water
Prepare the pasta according to package directions, making sure to reserve the pasta water.
In a food processor, place the sun-dried tomatoes along with the oil from the jar. Add the basil, garlic cloves, Parmesan cheese,salt and pepper. Process until you have a smooth consistency. Remove into a medium bowl and add enough pasta water to make a smooth, but not runny pesto.
Add the pasta and carefully fold into the pesto to evenly coat the pasta.
You may serve this with some extra grated Parmesan cheese and a few leafs of basil.
