Summertime is here and so is eating light, but still keeping it healthy and nutritious. As you may have come to know me, you know how much I love to cook with fruit. It adds a slight sweetness to every dish and adds beautiful color. Fruit adds color, vitamins, fiber and anti-oxidants to our daily diet. There is no real thought process to this, just add the fruits you enjoy the most.
Since strawberries are in season, and one of my favorite fruits, why not incorporate this into any meal. I believe most people are not too sure where they can add fruits into their meals. Well, here is a simple rule of thumb..wherever you want to! Food is about taste, pleasure and nutrition. If you hate strawberries but love blueberries, then substitute them. It’s not going to make a world of difference, it will just get you to eat more wholesome fruit. The whole point of the fruit in any meal is to add whole fiber to your diet. That’s it. The rest of this meal is purely based on fiber, calcium and anti-oxidants.
You can be as creative as your taste buds like. Just remember, nothing out of a box, nothing out of a can! Just pure, natural food. And as always, Enjoy!
Grilled Chicken Served over Arugula Salad with Goat Cheese, Strawberries And Walnuts
Ingredients: Serves 2
- 12 ounces boneless, skinless chicken breast cut into long strips
- Salt and Pepper to Season
- 2 Tablespoons Olive Oil
- 2 cups Organic Baby Arugula
- 6 Large Organic Strawberries
- ½ cup Chopped Walnuts
- 2 ounces Fresh Goats Milk Cheese
- Extra Virgin Olive Oil for drizzling
Preparation:
Heat a non stick skillet and add the olive oil. Once hot, add the chicken and cook over a medium low heat for 3 minutes per side.
While chicken is cooking, slice the strawberries.
Once chicken is done, place arugula on a plate. Add the walnuts. Drizzle with the olive oil and gently toss. Season the salad with salt and pepper. Add the chicken, strawberries and place the goat cheese throughout.
