Are you in the mood for something tasty, quick and delicious and that brings you back to a tropical island? How about some coconut, lime shrimp? This is such an easy and satisfying dish to prepare as either your main meal or as an appetizer. Just drizzle your shrimp with some fresh lime juice, pour a refreshing drink and sit back and enjoy!
Coconut Lime Shrimp
Ingredients (Serves 1 or 3)
- 6 extra large cleaned and deveined shrimp
- 2 tablespoons canola oil
- 1/4 cup plain bread crumbs
- 1/2 cup shredded coconut
- 1 egg white
- 1/8 teaspoon cayenne pepper
- salt to season
- 1/2 lime
Preparation:
Clean and pat the shrimp dry. Take 2 bowls and in one combine the bread crumbs with coconut. In the second bowl add the egg white, salt and cayenne pepper, mix with a fork. Heat the canola oil in a skillet. Take each shrimp and first dredge in the egg mixture and then in the bread crumb. Once coated place on a plate and press any loose crumbs onto the shrimp. Once oil is hot, place the shrimp in the pan and cook about 3 minutes each side on medium low heat as to not burn. Squeeze some lime juice over the shrimp just before removing from stove.
