If you may be asking yourself, “What’s for dinner tonight”, then here is the perfect meal that is super quick and packed with delicious Middle Eastern spices. It will taste as if you were cooking all day, but really only 18 minutes! The chicken will also be very moist and tender.
You can serve this with a side or rice, quinoa or by itself, just like I did. Either way, you will be very pleased. Enjoy!
Coriander Chicken With Cilantro
Ingredients: Serves 2
- 2 4 ounce boneless skinless chicken breast
- 2 tablespoons grape seed oil
- 1 teaspoon grated fresh ginger
- 1 teaspoon crushed garlic
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- pinch of salt and pepper
- 1 tablespoon tomato paste
- 1/2 cup fresh cilantro, chopped or 4 frozen cilantro cubes
- 3/4 cup chicken stock
- 1 cup diced fresh tomato
Preparation:
Heat the oil in a large skillet over medium low heat. When hot, add the garlic and ginger. Cook for about 30 seconds and then add the coriander, garam masala, salt and pepper. Cook for an additional 30 seconds, constantly mixing so it will not burn and to mix in all of the flavors. Stir in the tomato paste. Add the chicken and cook for about 3 minutes on each side. Add the chicken stock, tomatoes and cilantro. Allow to simmer on low for about 12 minutes or until chicken is cooked through.
