Yellow Pepper Stuffed With Red Quinoa And Vegetables

It’s meatless Monday, so I wanted to create a very healthy  meal that was packed with protein and vitamins, Yellow Pepper stuffed with Red Quinoa and Vegetables!

What better vegetable than a yellow pepper for color that will serve as my bowl for the goodness packed inside? I first roasted the pepper in a preheated 450 degree oven for 15 minutes. While that was getting ready, I prepared the  red quinoa and sauteed some vegetables. I used asparagus, red onion, mushrooms and green onion. Once they were all made I mixed them all together, added some grated Parmesan cheese and carefully stuffed the roasted pepper. I added some shredded Mozzarella cheese on top for some extra calcium and of course delicious flavor. Lowered  the oven to 400 degrees and  popped the stuffed pepper back in back in for 8 minutes. Removed it and while cooling for 5 minutes added some chopped green onion. Now how simple (and delicious) is that? Enjoy!
