Eating healthy and light is very important for a long life. The right amount of “good fats”, fiber and vitamins not only will help provide a healthy heart and body but will have you enjoying delicious foods.
I love salads, even more when someone else makes them for me, but this one, I whipped up for myself. I basically kept it simple and added what I already had at home. I used a mix of all organic salad greens, grape tomatoes, avocado, pink grapefruit sections, salt, pepper and some shaved Parmisan Reggiano. Drizzled some fresh lemon juice and enjoyed!
