Orange Mango Salsa.
To me, a salsa is an infusion of many flavors incorporated into a thicker sauce that can be either cooked with or added as a condiment. This particular one may be used either way and tastes delicious.
I love to cook with fresh fruits and vegetables, or as I call them, “Natures’ Sauces”. They add such beautiful colors onto our plates and enhance the flavors of our meals. Using a food processor or a blender to mix up these ingredients to create different sauces or salsas are also an easy way to incorporate more fruits and vegetables into our daily diets.
Inspiration for different foods come to me when I walk through a beautiful, fresh and organic produce isle or at the farmers market. I simply just pick the foods that I enjoy, and also try new foods, and start creating. I try to keep it simple.

Orange Mango Salsa
Ingredients:
- 1 mango, peeled and large seed removed, mango cut into cubes
- 6 tablespoons fresh orange juice
- salt to season
- 1 cup cilantro, chopped
- 1/2 medium red onion, chopped
Preparation:
Place all of the above ingredients into a food processor and processor to a creamy, texture about 2 minutes. Serve with grilled fish or chicken.
