Eating healthy is so important and making the right food choices helps our bodies stay healthy. Salmon, which is high in Omega 3 is a great way to feed our hearts with the right type of nutrients and important “fat” that we need. What I love about this quick to prepare fish is that you can pair it with so many different sides and change up the meal all the time.
I found the peppery flavor of arugula, the “bite” of the radish and the sweetness of the cranberry sauce to go very well with this caper, wine and garlic salmon.

Salmon With Arugula Radish Cranberry Salad
Ingredients: Serves 1
- 1 4 ounce salmon fillet
- 1 teaspoon olive oil
- 1 teaspoon unsalted butter
- salt and pepper to season
- 1/2 teaspoon capers
- 1 clove crushed garlic
- 1/8 cup dry white wine
- 1 teaspoon lemon juice
- 5 slices of radishes cut paper thin (I used a vegetable peeler)
- 1 cup arugula
- 2 tablespoons cranberry sauce with berries
Preparation:
Heat a skillet to hot heat and heat the olive oil with butter until the butter melts. When hot add the salt and pepper seasoned salmon and cook over medium low heat 4 minutes without moving it. Turn the salmon over and cook for 2 minutes. Add the garlic and white wine and cook an additional 1 minutes. Add the lemon juice over the top of the salmon and cook an additional 30 seconds.
Carefully remove the salmon onto a plate with the arugula and radishes. Pour the sauce over the fish. Add the cranberry sauce to the side and . Enjoy!
