Fennel is a beautiful fragrant food I love to cook with. It has this amazing anise smell, although once cooked it becomes a mild sweet vegetable. This pairs so well with pork. It provides a not so sweet and salty taste. The tomatoes add a beautiful color and are packed with vitamin C. These little bursts of flavor are also a good source of vitamins A, K, B6, folate and potassium.
I served this with some mashed potatoes for that hearty cold day food.
