If you are in the mood for a meal packed with great flavor but one that can be prepared in a flash this is your answer! This is very low in fat and calories and from start to finish you can be eating in 10 minutes. How simple is that?!
I just used simple, healthy ingredients, as always. Since I am a food blogger I have to be very creative. I have to come up with new recipes all the time, even though sometimes I want to re-create the same recipes that are my favorites. But this recipe is actually one of my favorite recipes because it consists of shrimp which I love, basil, tomatoes, garlic and olive oil. Ingredients I love to use all the time.
To prepare this recipe you will need:
- 5 extra large shrimp cleaned and de-veined
- 2 tablespoons olive oil
- salt and pepper to season
- 1 tablespoon chopped fresh basil
- 1 clove finely chopped garlic
- 1/2 cup grape tomatoes
Heat the olive oil in a skillet over medium low heat til hot. Season the shrimp and tomatoes with salt and pepper. Add the tomatoes and shrimp. Cook until the shrimp start to turn pink, about 2 minutes. Turn the shrimp over and move the tomatoes and turn them . Add the garlic and continue cooking until the shrimp are pink on the other side, about 2 more minutes. Remove from heat and add the fresh basil. Enjoy!
